    Salmon Fillets with Dill Couscous and Spicy Kale

    Ingredients

    • 3 tablespoons extra virgin olive oil (EVOO), divided

    • 1 red onion, chopped

    • 1 bunch kale, stemmed and chopped (about 1/2-2/3 pound)

    • 1/2 teaspoon red pepper flakes

    • Salt and pepper

    • A few grates of fresh nutmeg

    • 2 1/4 cups chicken stock, divided

    • 3-4 radishes, thinly sliced

    • Juice of 1 lemon, divided

    • 4 skinless salmon fillets

    • 1 tablespoon Old Bay seasoning

    • 1 tablespoon butter

    • 1 1/4 cups couscous

    • 1/4 cup fresh dill, chopped

    • 1/4 English (seedless) cucumber, cut into 1/4-inch dice

    Directions

    In a large skillet with a lid, heat 2 tablespoons EVOO, two turns of the pan, over medium-high heat.

    Add the onion and cook, stirring, for 3-4 minutes, then add in the red pepper flakes and wilt in the kale.
